Nutty Chewy Bars

I consider bars of any kind a lovely treat or something nice to have around for an on-the-go breakfast.  I kind of made these on a whim and absolutely love them! Quick AND easy!

So, the original recipe for the “Walnut Sticks” is from The American Woman’s Cookbook. I made some slight modifications because I didn’t have walnuts or dark brown sugar around. Annnnnd, I added raisins because I like dried fruit with my nuts. I also renamed the recipe because when I think of the word “sticks” in reference to food, I think of bread or pretzel sticks. So, really, this recipe is quite altered, but this is my blog and it’s now my recipe.

Almond Pecan Chewy Bars

Ingredients:

  1. 3/4 cup crushed almonds
  2. 1 handful of slivered almonds for decoration (optional)
  3. 3/4 cup honey roasted pecans (available from bulk food section at many grocery stores)
  4. 1/2 cup flour
  5. 1 cup agave nectar
  6. 1 tsp natural vanilla extract (the real stuff)
  7. 2 eggs
  8. 1 small pinch of sea salt
  9. 1/3 cup golden raisins

Process:

  1. Try hard not to eat the nuts and raisins
  2. Preheat oven to 375
  3. Grease 9×12 baking pan
  4. Mix agave nectar, flour and salt
  5. In a separate bowl beat the eggs and vanilla extract
  6. Combine the dry and wet ingredients
  7. Fold in the nuts and raisins
  8. Pour into pan
  9. Add slivered almonds for decoration
  10. Bake for 20-25 minutes
  11. Cut while warm
I think you can use any nuts provided that they are not salted. Or maybe slightly salted nuts, and just don’t add the sea salt? Hmm…guess we’ll see!
